ROYAL INDIAN CUISINE

Chapslee is renowned for its Cuisine, a legacy of the royal ‘House of Kapurthala.’


In days gone by, each known royal house of India had a culinary repertoire distinctly its own and prized recipes were heavily guarded secrets. Even so, there was mutual exchange of recipes between members of different families or they travelled as part of the trousseau of the royal bride and also through the khansamas who sought employment in different households. Over time many of these recipes got assimilated into the collection of another royal house. Thus, to a great extent North Indian cuisine got intermingled with no specific allegiance to any particular State. In the case of the Chapslee branch of the Kapurthala family the cuisine was influenced by the houses of Patiala, Bhawalpur and Kashmir, but above all, by Awadh, due to a close bond of friendship with the family of NawabWajid Ali Shah.


Raja Charanjit Singh of Kapurthala was a gastronome, and was renowned for the cuisine that graced his table. His legacy is the delectable culinary repository that Reggie inherited and in turn passed on to the next generation. These recipes were refined and honed to perfection by Reggie, himself a gourmet extraordinaire, and continue to be served to our guests at Chapslee. Some of these include Pasanda Kebab, Naranj Pulao, Pulao Firdaus, Aaloo Bukhara Gosht, BadamiMurg, Machlika korma, Narangi Kheer, Phirni, ShahiTukda.


Dining at Chapslee is not only about food. It is a complete experience where adherence to tradition is given due importance. Indian cuisine or ‘desi khana’ is served to our guests in traditional silver thals and silver tableware which not only enhances the delicate flavours but creates an aura which is visually appealing, fragrant and almost magical.
