ANGLO INDIAN CUISINE

During the days of the Empire, the British stationed in India began mixing Indian flavours and spices with English dishes, and vice versa, creating what came to be known as Anglo-Indian cuisine. In reality, it was influenced by all the European imperialists, with traces of Dutch, Portuguese and French elements as well. By default, this cuisine evolved in British colonial institutions like dak bungalows, army canteens, railway kitchens and gentleman's clubs. It is believed to be one of the first examples of fusion cuisine in India.


Chapslee is unique for being one of the few places to offer an Anglo Indian Menu which is now a rarity. Recipes such as Mulligatawny Soup, Glace Chops, Panteras, Beckti Moilee, Pish Pash, Steamed Ginger Pudding, Bread and Butter Pudding, find pride of place at Chapslee being some of the treasures that have survived.


It would not be out of place to mention that Reggie had the privilege to host the gourmet extraordinaire Anthony Bourdain at Chapslee for an exclusive Anglo Indian meal which was covered extensively in the CNN feature titled “Parts Unknown Punjab, India” in 2014.
